Harvest Rolls Out Farm-To-Fork Menu

Before our country became so urban, people bought their food directly from the farm or the local market. If a product was tasty and ripe, they knew who was responsible. At Harvest Restaurant at Pheasant Run Resort, Executive Chef Tiffany Tooker not only knows where their food is coming from and the farmers responsible, but she is uniquely proud of what that means for the guest dining experience. 

Executive Chef Tiffany Tooker is an East Coast award-winning chef with a progressive culinary experience that spans over twenty years. She's been named Executive Chef of the Year three times by HostMark Hospitality. She had experience in hotels, independent restaurants, catering, and country clubs before arriving in Saint Charles in 2014 to work for Pheasant Run Resort where she oversees three restaurants, banquets, quality, and a staff of twenty-four.

Chef Tiffany is the creative force behind all of the restaurant and catering menus at Pheasant Run Resort as well as customized menus for special events and private affairs. With the new Harvest menu, the focus is on farm to table dining. The connection between guests and the food served comes to life with this farm to table philosophy.

The Chef invites you to sample this philosophy in their newly released menu at Harvest. She is even willing to share a glimpse of the fresh fare coming out of the kitchen. Try your hand at mixing up this delicious Chimichurri Sauce for yourself at home. Of course you are always welcome to stop in to get it directly from the source. Just ask for the Teres Major Steak off the new menu. This is upscale farm-to-fork dining at its finest!

Chimichurri Sauce  - Yield 1 cup

1 tsp. kosher salt or to taste

½ cup finely chopped cilantro

¼ cup finely chopped parsley

¾ cup extra-virgin olive oil

1 shallot, finely chopped

1 jalapeño, finely chopped

3-4 garlic cloves, thinly sliced or finely chopped

½ cup red wine vinegar

1oz fresh lime juice

2 lbs terse major or skirt steak

 

Preparation

Combine shallot, jalapeño, garlic, vinegar, lime juice, and salt in a metal bowl. Stir in cilantro and parsley. Slowly whisk in the oil. Transfer ½-cup chimichurri to a small bowl; season with salt and store in refrigerator. Place meat in a separate bowl and add the remaining chimichurri. Cover and chill 2 to 4 hours or overnight. Remove meat from marinade and grill to medium rare or 120 degrees. Once meat is cooked to your liking, slice on a bias and drizzle the extra chimichurri sauce over beef. Enjoy!

Management Mingle

Managers from the entire resort got together for a friendly game of golf to kick off an exciting summer at the resort. In teams of four, they played best ball, longest drive, longest putt, and enjoyed some tacos to end the day. Everyone had a great time learning more about golf and the course while mingling with coworkers from different departments. It was the perfect way to celebrate all of the hard work these managers put in every single day.

Pheasant Run Resort has been busy sowing the seeds for success and we're delighted that those efforts are beginning to pay off. On Thursday, February 8th at the Chicago Mart Plaza, several Artists from Pheasant Run Resort were recognized by Hostmark Hospitality Group for outstanding achievements in 2017.

At its 2018 Leadership Conference, Hostmark Hospitality Group awarded Artists from across the country for excellence in their fields. 

From Pheasant Run Resort, Lisa K. Adams, Marketing Manager, received the SMART Artist of the Year Award. Hal Barth was nominated for Director of Sales & Marketing of the Year. France Langan received the Full Service General Manager of the Year Award. And Sergio Huerta, our Pheasant Run Artist of the Year, won the Regional Artist of the Year Award.

Although not in attendance, we were thrilled to also celebrate for Bruce Miller who won the Food & Beverage Director of the Year Award and Nick Kolb, awarded the Engineer of the Year.

Congratulations also go to Patricia Quinn, nominated for Director of Human Resources of the Year and Debbie Fields, nominated for Director of Catering of the Year.

It's been an amazing year at Pheasant Run Resort and we're excited to see what's in store for 2018. Ready, Set, Grow!

Stars of The Industry: Bruce Miller

We'd like to congratulate Bruce Miller, F&B Director at Pheasant Run Resort, for his 2017 Stars of the Industry Award nomination.

Bruce consistently goes out of his way to take care of our many guests.  As you can image, with 293 guest rooms, 88,000 square feet of meeting space, 4 restaurants, Golf, Spa, and Comedy Club, he can be asked nearly anything on any given day. 

Here is a perfect example from last Easter, when Bruce was also overseeing Brunch for 1200 people in our Grand Ballroom:

"We recently had the pleasure of visiting Pheasant Run Resort and enjoying their fabulous Easter Brunch. It was complete with every food imaginable, carving stations, omelet’s, seafood and “yes” even the Easter Bunny. They had a petting zoo and the kids, “loved it”!

My mistake was thinking that they had an Easter Egg Hunt as well that day, but after reading correctly; realized that I had missed it the day before. I approached a Manager and asked him if there was anything he could do for the eight kids I had with me and to my surprise, he said; let me check on something.

This man’s name was Bruce Miller the Food & Beverage Director of the resort; he’s busy overseeing service for 1200 and he comes back with a basket of eggs. He personally proceeds to take the eggs outside and place them around trees, under bushes and so forth. He then tells me the kids hunt is ready.

The kids had a blast and it’s a memory I will never forget! We will see you next year and make sure to catch the Saturday Easter Egg Hunts. Thank you, Pheasant Run Resort."

For the many hours that Bruce works, the leadership and direction he provides as well as the hospitality he provides our many guests, this 2017 Stars of the Industry Award nomination is well deserved.

Stars of the Industry: Sergio Huerta

When you think of someone worthy of Stars of the Industry it has to be someone who does much more than just his job. It has to be a staff member who is passionate about serving others and excels at their primary role but is also willing to take on other responsibilities for the good of the operation.

Sergio Huerta might be a bartender by job code but in reality, he is so much more than that. Sergio has been a full - time bartender for the past 11 years at Pheasant Run Resort. In a business dominated by transient staff he has been a constant at the different lounges within Pheasant Run. Sergio works as a bartender wherever he is needed including but not limited to Harvest, Jambalaya, The Clubhouse, Zydeco Jacks, and Banquets.

He is an outstanding bartender who is very creative and willing to experiment with drinks. Sergio’s house made Sangria is always the most popular beverage out at the pool bar on hot summer days. Sergio will actually pick mint leaf out in the Chefs Garden to make his famous strawberry mojitos which are a big hit all Summer long.

Sergio is constantly mentioned in guest comment cards because he always takes the time to get to know everyone who sits down at his bar. He has a great memory and always recognizes returning guests and greets them as he would greet a good friend which makes them feel special.

Sergio is one of the rare staff members who never stands around idly as he is always cleaning or working on a project to improve the resort. Sergio is very gifted mechanically and often repairs and services equipment that is off limits to all staff except for the most talented engineers. He rebuilds soda compression systems and troubleshoots the complex draft beer system connected to 3 different restaurants when it goes down.

Sergio is undaunted by hard work and will never call a manager to change a beer keg in the basement instead choosing to simply do it himself so he knows it is done right. All bar staff love to follow Sergio because they know the bar they are coming into will be spotless and well stocked.

Every year Sergio is selected at least once as the “Artist of the Month” and his name appears on ballots at least 6 times a year. What really separates Sergio is his willingness to do anything to help the resort. He does not do it for attention or recognition but because it is the right thing to do and because he understands that every staff member has a vested interest in the success of the resort.

In the last year Sergio has by himself reupholstered the lounge chairs in the Clubhouse, fixed a broken chair in the Tower Lobby, and repaired the cobblestones on Bourbon Street with quick setting concrete. Recently he took it upon himself to clean the ceiling tiles outside the public bathrooms in the Tower Lobby.

Sergio is one of those rare staff members who loves his profession and serving others. He sets a great example for others with his work ethic and he always tries to leave the resort a better place every day that he works.

This is why we have nominated Sergio Huerta for a Stars of the Industry award!

Adam is pictured here with AGM, Rick Remington, who was pleased to present him with this award. Adam does an all-around awesome job. He is the poster boy for calm, cool, and collected at a job that gives you many opportunities to have a meltdown. He handles anything that is thrown at him at the front desk with professionalism and humor. He provides a tremendous amount of support to his line employees, Lindsay (FOM), and Rick (AGM). He can always be counted on to jump in and help where needed and is a true team player. During first quarter Adam was our Assistant Front Desk Manager and has recently been promoted to Food and Beverage Manager.

Patricia Quinn (Director of HR, pictured left) presented Roberto with the award for the Heart of the House Artist of the Month.  Roberto is a Grounds Keeper and the main man around the hotel grounds. He keeps an eye on everything outside the hotel; he lets us know if there are any areas that need attention or care. If asked to complete any job it is immediately completed. He is a valuable team member of the grounds team and Pheasant Run Resort! He took charge of cleaning out the back fish pond without missing a beat.

Janis (pictured left) captured this perfect moment with Donna Rodriguez & Marlene Fisher (Banquet Servers) shortly before the doors opened to 1,200 Easter Brunch guests with the caption "We got this!" Janis is the Artist of the Month - Front of House because she is a reliable and excellent Banquet Bartender. She is personable and professional. She does a great job making new guests feel welcome and a great job remembering previous guests and making them feel like they are coming home. 

Thank you to all our Artists who contribute to the larger mission, not just the tasks of their jobs. They truly transform the guest experience and make extraordinary things happen!

Faces of Travel @ Pheasant Run

National Travel and Tourism Week serves to champion the power of our industry. This year's theme, Faces of Travel, recognized the millions of people who keep this industry strong.

Here at Pheasant Run Resort, we wanted to celebrate our Artists in a big way. We invited our Mayor and City Administrator along with the press for a behind the scenes tour of the faces that make Pheasant Run successful.

We continued the tour to our Library, where we met with Maria, Accounts Payable Clerk (who has been with Hostmark for 10 years) and Regina, Human Resources Coordinator, ho has been with us for 25 years!

Jamie, PGA Professional and Golf Operations Manager spoke about the 26 golf outings we have scheduled for 2017, the 24,000 rounds of golf we anticipate this year, and that our course was just awarded Best Public Golf Course, West Suburban Magazine.

Executive Chef Tiffany spoke in our Club House Lounge about her garden and providing Farm to Table fare for Harvest Restaurant. 

Lori, owner of Spa Vargas Wellness, spoke about focus on wellness and athlete services that sets them apart. They also provide training through Spa Vargas University.

Margy, Director of Convention Services, spoke about the 250,000 visitors to the Mega Center each year and that we have attractions in our facility 46 weekends of the year. These visitors stay at our hotels, other local hotels, and patronize local businesses in Saint Charles, IL.

Gabby, Marketing Manager from the Arcada Theater, shared with the press our partnership to bring entertainment back to our theater. They are actively booking entertainment, but we can already look forward to performances of Aladdin Jr and Hairspray this summer!

We concluded our tour on our revived Bourbon Street in the heart of Pheasant Run Resort. Zanies Comedy Club has been bringing nationally known comics like Gilbert Gottfried, Drew Carey, Emo Philips, and Tommy Chong to Pheasant Run for 27 years. With 250 seats in the club, four shows a week, they have easily brought over a million people to Pheasant Run.

Adriana, a Kitchen Supervisor, spoke of the work her team does in cold prep and what really goes into preparing for our extravagant Mother's Day Brunch this weekend.

iPANiC Escape Room has just opened a new room called Bourbon Street Voodoo this week and will be adding a second pirate-themed room, Shipwrecked, soon. 

The St Charles Arts Council is currently hosting a Pop Up Gallery featuring local artists, and Elizabeth from the council shared with the press what a great experience it has been working with us to bring art to Bourbon Street again.

Overall an amazing show of support and enthusiasm for Travel & Tourism Week at Pheasant Run Resort in Saint Charles, IL. We're all very excited for the great things happening at the Run and now key members of our city are getting excited about it too!
